Cranberry Streusel Cake



This recipe from Emily Barne's "The Twelve Teas of Christmas" helped warm up our morning and get us off to a great start.

Cranberry Streusel Cake

Streusel Mixture:
3/4 cup packed light brown sugar
1 teaspoon cinnamon
1/4 cup flour
1/4 cup butter

In a small bowl, cut and mix together above ingredients, then set aside.


Cake Mixture:
1/2 cup butter
2 eggs
1 cup sour cream
1 cup sugar
1 teaspoon vanilla

Beat cake ingredients together in large bowl.  Gradually add to the above mixture the following dry ingredients:

2 cups flour
1 teaspoon baking soda
1teaspoon baking powder
1/2 teaspoon salt


Wash 1 bag of fresh or frozen cranberries and set aside.  Preheat oven to 350 degrees.  Grease an angel food cake pan.  Spread half of cake mixture into pan, followed by half of streusel mixture and half of cranberries.  Repeat with other half batter, then cranberries, then streusel.  Bake 1 - 1 1/4 hours.
