Spaetzle


Last week, when our friends the Pierces spent the night, they taught us how to make Spaetzle (tweaked slightly to fit their family).  Thanks for sharing the recipe and being our guests chefs!

 
5 eggs
3 cups flour
1 cup water (may need more depending on many factors)
pinch of salt
 

 Mix the batter.  Add more water as needed to make it thin enough to go through your device of choice.  Most families don't have a spatzlesbrett (a wooden board with a handle on one side and a beveled edge on the other), we don't.

 
The batter can obviously be a bit thicker with a funnel than trying to force it through a slotted spoon.  Mix air into the batter for 20 minutes or so until it gets bubbly.


 Boil salted water in a wide pan.  


Add the spaetzle.  When it floats, it's done.


 Layer spaetzle with toppings.  We usually use meat, garlic, onion, green pepper, cheese.  I would think the topping choices would be unlimited.
